My cupcakes came out a little dry and crumbly, the texture was that of a corn muffin. I thought I may have baked them too long, so I shortened the baking time of my second batch, unfortunately I got the same results. The frosting is nice and thick. I added a little orange extract to bring out the flavor. Also, it started to dry out while I was frosting my cupcakes, so I put it all into a pastry bag.

This is not your garden variety cupcake. The icing is packed with flavor and is accompanied with a wonderfully textured cake. I made this recipe using cake flour, decorated with a sprinkling of fresh lemon zest and otherwise followed Redsie's directions to a "T". Thanks so much, Redsie!
