ingredients
- 4 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 slices crumbled bacon
- 1⁄2 cup thinly sliced onion
- 8 cherry tomatoes
- 1 cup pumpernickel crouton
- 2 chopped hard-boiled eggs
- 1⁄2 cup sliced mushrooms

Dressing
- 1⁄2 cup olive oil
- 3 tablespoons cider vinegar
- 1 teaspoon sugar
- salt
- pepper
directions
- Combine dressing ingredients and toss 1/2 of the mixture with the spinach.
- Arrange all remaining ingredients on top of dressed spinach.
- Serve remaining dressing on side.

Excellent Spinach Salad. I did add a little extra Splenda to the dressing for personal preference, and left off the bacon but other than that made as directed. Used recipe #142857 to make Pumpernickel Bread then made my own toasted crouton's. Those were a nice addition if you like Pumpernickel Bread. Don't really care for it, but toasted was much better. Thanks for sharing. Will make again with different croutons. Made for My Three Chefs. :)
