Cauliflower With Cheese and Shallot Sauce

  • Divide cauliflower into florets, cook in boiling salted water until tender, drain.
  • Melt half the butter in a saucepan and saute the breadcrumbs until browned.
  • Make a white sauce with the remaining butter, flour and milk.
  • Season and stir in the cheese and shallots.
  • Arrange cauliflower in an ovenproof dish, spoon over the sauce and sprinkle with the breadcrumbs.
  • Bake uncovered at 350 degrees for 20 minutes or until browned.
