This was a great way to use my leftovers cauliflower from thanksgiving. I used cheddar cheese instead (because it is more kid friendly) We all loved it.

Very comforting! So rich and creamy. Next time I will boil the onion (which I will add more of) with the cauliflower and just throw it all in the blender. I was shocked at how much this tasted of potato soup! Of note, I used only 1.5 T of butter, seasoning salt, whole wheat flour and fat free milk all with great results. Made for our Veg*n VIP Oct 2009.

Delicious soup. I'm a huge cauliflower fan. I added a bit of cheese at the end and freshly ground pepper. I like the bit of cayenne. I will make it again for sure.

this is some great soup with perfect texture, I added in some chili flakes for heat and used 1 teaspoon seasoned salt and lots freshly ground black pepper, I am going to try this using broccoli next time, thanks for sharing mersaydees! oops forgot to mention I also added in 6 cloves minced garlic in with the onion :)

This is a great soup! We also used chicken broth, and added just a pinch of white pepper. We took another reviewers advice and also added some cheese. Cheddar to my bowl, and swiss to Buddha's. I also saved some flaurettes for body and added them in just before serving. This is a great creamy soup that we will definitely be making again. Thanks for posting. :)

A very comforting cauliflower soup indeed! It really doesn't take many special ingredients as I had most everything, except the cauliflower, on hand already. I used fat-free chicken broth in place of water and reduced the butter to 1T (I'd probably reduce the flour to the same next time as it seemed there was extra). DH felt it needed black pepper, but I liked the simple flavors that this soup provided. Next time I'll be sure to dice the onion much smaller since they don't go through the food processor. All in all a very satisfying veggie soup!

I LOVE cauliflower, and this was such a wonderful treat for me!! I did halve the recipe, and used "Superior Touch Better than Bouillon" into the water when I cooked the cauliflower. Also used up the last of my half and half which was 1/4 cup that and 3/4 cup milk. Subbed 1/2 tsp. minced onion also, since it was just for me and a smaller amount. I still needed to add a lot of salt, and after the first serving, I added cheddar to the remainder, and liked it even better. But that's just me. It was wonderful! Thanks so much! :) (Oh, and I did up the amount of cayenne, too, but that also was just a personal "want"! ) :)

Loved this cauliflower soup (please see how I rate)! My Mom made lots of different cauliflower dishes that indeed have a mythical place in my memory. Nothing is so comforting as a good tasty cauliflower soup, and this one is great, I'll make it again.

Heavenly!!! Quite possible the best cauliflower soup I've ever tasted. It's also quite simple to make. I added some chicken base to the boiling water, so I then used less salt. The texture is so creamy and silky. Wonderful choice of cheese for garnish. This is a keeper for sure! Thanx for sharing!
