  • In a heavy kettle, melt butter.
  • Add oil.
  • Add onion, scallions, and garlic.
  • Add celery and cauliflower.
  • Add seasonings.
  • Mix well and cook, un-covered, over medium heat for several minutes, stirring frequently.
  • Add water and Miso.
  • Bring to a boil.
  • Simmer, covered, over medium heat for 15 minutes, or until cauliflower is tender.
  • Remove cover and cool slightly.
  • Puree in small increments in blender until smooth and creamy.
  • Reheat, adding nutmeg, if desired.

I have been collecting cookbooks since I have been married. I own over a 100. My favorites are the ones I purchased at the Antique Stores. I bake from September through January. Then I shut the oven down and we don't eat much cooked foods from then until next fall. We go into a healing mode and eat very healing foods. One of my daughters suffers from a serious incurable that is kept intact by this routine.
