This recipe has been passed around most of my town; everyone who tries it LOVES it and asks for the recipe. If you don't have fresh lemons, only juice (eg in a bottle), you can leave the rind out. Delicious side dish to barbecued or grilled meat. Tastes even better the next day. Cook time is chill time.
- 1⁄2 small cauliflower
- 100 g raw cashews
- 100 g sultanas
- 50 g shredded coconut
- 200 g plain low-fat yogurt
- 1 lemon, rind of, grated
- 1⁄2 lemon, juice of
- salt and pepper
- Cut the cauliflower into small florets (about the same size as the cashews is good) and chop the stalks a little finer.
- Place all ingredients in a large bowl and toss.
- Stand at least one hour before serving (overnight is better).
