ingredients
- 1 head cauliflower
- 1 bunch red leaf lettuce
- 1 purple onion, diced
- 1 1⁄2 cups mayonnaise
- 3⁄4 cup sugar
- 1⁄2 cup parmesan cheese
directions
- make dressing by mixing mayo, sugar and cheese together. If not using until the next day, keep in fridge but remove 2 hours before serving salad.
- Break lettuce and cauliflower into small pieces in large bowl, add chopped onion.
- pour dressing a little at a time and mix together adding more dressing as needed.

Nice alternative to broccoli salad! I substituted low fat mayo and reduced the sugar slightly, and it still came out great. We loved the flavour the Parmesan added to the salad. I found that I didn't need all of the dressing. There's enough left to make another half salad later in the week. Yum! Thanks pollyw! Made for PAC Spring 2008.
