    Cauliflower Mashed Potatoes

    Prep Time: 10 mins

    Total Time: 30 mins

    1. 1 Steam the cauliflower in a bit of water until it gets really soft and mushy.
    2. 2 Put the cauliflower minus the stem part into a large mixing bowl. Add the rest of the ingredients. Beat with a hand mixer until you get the consistency of creamy mashed potatoes. Serve immediately.
    3. 3 Leftovers may be reheated in the in the microwave and taste just as good if not better the next day!

    This recipe is more delicious than real mashed potatoes, a lot lower in calories and carbs, and the leftovers are great reheated!
