My mother-in-laws recipe--a great low fat, low carb solution to those days where you just need a little something.
- 1 head cauliflower
- 1 cup breadcrumbs
- 6 tablespoons butter, melted
- 1 (14 ounce) can99% fat free chicken broth
- 1 teaspoon garlic powder
- 1⁄2 cup parmesan cheese
- Boil cauliflower. Mash and sprinkle with parmesan cheese and garlic powder.
- Add chicken broth and bread crumbs which have been mixed with melted butter. Bake 20 minutes.
