  • In the microwave, cook the cauliflower in a covered dish with two tablespoon of water until soft.
  • Drain the cauliflower and mash with the back of a fork or potato masher.
  • Add the egg, salt and pepper, and enough flour until you can form patties; about 1/4 cup.
  • Add enough oil to coat the bottom of a skillet. Over medium high heat, brown the caulflower patties. Eat!

  1. These are great! I put a bunch of garlic in, use about 1/4 tsp of salt and white pepper, and fry them in olive oil. As a side note, making them a bit smaller makes them crispier (as you would expect) and more fun!
     
  2. So tasty! These are great just as is, or you can season accoring to taste with garlic, herbs, or spices. Because I love cauliflower, I like these best with just a bit of seasoned salt.
     
  3. These were better than I expected, especially with only salt & pepper as seasoning. I used earth balance butter instead of the oil to fry in and they crisped up nicely. I brought leftovers to work and they heated up fine as well. Thank you for this recipe, I will be making them again.
     
  4. I picked this recipe to prepare for the PAC 2008.....and to my surprise these were very good!!! I didn't microwave my cauliflower, I steamed it in my steamer, but I think I might have overdone it. When I mashed the cauliflower, it was really wet and sticky; I added about 1/2 cup of flour, the egg, and then seasoned it. I was pleasantly surprised and will definitely be making these again....they were so easy!! I wonder if broccoli would be great too? Hmmm....we'll have to make that and see. Thanks for sharing the recipe.

Tweaks

  1. Here was my tweak.. garlic powder and grated romano cheese
     
  2. Add some grated cheddar cheese to make cauliflower cheese fritters
