Cauliflower Delight Casserole

Steamed cauliflower is covered with a creamy cheese sauce, then topped with a Parmesan cheese breadcrumb mixture and baked until bubbly and golden brown. Awesome!

  1. Separate cauliflower into small florets and steam over boiling water for about 10 minutes.
  2. Place cauliflower in an 8" square baking dish.
  3. Melt butter over medium heat in a saucepan, then stir in flour for about 1 minute.
  4. Gradually whisk in milk and simmer, whisking until thick for about 8 minutes.
  5. Add cheddar cheese, dry mustard, salt and pepper until cheese is melted.
  6. Pour cheese sauce over cauliflower.
  7. In a small bowl, mix together bread crumbs, Parmesan and parsley and sprinkle over cauliflower mixture.
  8. Bake at 400° until bubbly and golden, about 15 minutes.

Thank you!! My Mom always made this for special occasions. I am making a recipe box for my son and lost Mom's recipe....I always just do it from my head. Needed the specific measurements. I am so glad you posted this!

Delicious! I love that it's a homemade cheese sauce. Plus it's not hard to do. The topping is outstanding-we loved it(my kids do like cauliflower anyway so it was really easy to get them to eat this.) I will definitely make this again. Thanks Marie!

Nice enough but rather bland for my taste. I'd make sure to use sharp cheddar if I made this again and maybe a shot or two of hot sauce. Again, pleasant but not a standout.
