- 3 zucchini, grated
- 1 green apple, grated
- 1⁄2 head cauliflower, grated
- 2 green onions, chopped
- 1⁄2 cup toasted slivered almonds
- 1⁄4 cup chopped fresh cilantro
- 1⁄4 cup lime juice
- 1⁄4 cup olive oil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 tablespoon poppy seed (to garnish)
- In a large bowl combine all of the salad ingredients.
- In a small bowl whisk together all of the dressing ingredients. Taste and adjust seasonings.
- Pour dressing over salad. Add poppy seeds and toss to combine.
