Cauliflower and Gorgonzola Cheese Soup

My own creation when I cleaned out the fridge...TTFN


  1. Steam cauliflower in water until soft (reserve water).
  2. Sauté onions in separate pan.
  3. Combine onions and cauliflower with water and bring to boil and puree with hand mixer.
  4. Cook over low heat.
  5. Add carrots.
  6. Salt and pepper to taste.
  7. Just before carrots are tender add gorgonzola, parsley and thyme.
  8. Serve with croutons or tortilla strips.
