This was excellent tasting, but I had to add more butter and a little olive oil because the cauliflower seemed to absorb the butter immediately. I will probably make this again, but will microwave the cauliflower a little to start the cooking. I also used garlic salt instead of the salt to enhance the garlic flavor. All in all a great idea for weight watching. Thanks so much.
I haven't gotten this down to an art yet, but I like the idea. I used soy sauce and egg for an egg-fried rice, but I think I grated the cauliflower too fine. Grating the cauliflower is a lot of work but it wasn't as messy as I expected.
Great! Loved this. Grating the cauliflower was a little annoying, as the cauliflower flies about a bit when you grate it. I skipped the butter and just used some cooking spray. I also added some soy sauce. Thanks for posting this great recipe and I'm excited to try other "fried rice" recipes with the cauliflower.
