Caularoni

Great low carb substitute. Surprisingly enough it is pretty decent. Even my kids liked it and they hate veggies. 1 head of cauliflower should be plenty.

• Prep Time: 15 mins
• Cook Time: 15 mins

Ingredients:

Serves: 4

Yield: 1.0 pot

• 4 cups cauliflower , grated
• 3 tablespoons butter
• 1 tablespoon canola oil
• ½ cup diced onion
• 1 ¼ teaspoons garlic powder
• 2 bay leaves
• 2 teaspoons dried parsley
• ¼ teaspoon pepper
• 1 teaspoon salt
• ½ teaspoon turmeric
• 1⁄3; cup chicken broth

Directions:

1. Combine oil and butter over med/high heat.
2. saute onions for a couple minutes then add spices. Stir together.
3. Add Cauliflower and stir thoroughly. (your 'rice' should be all yellow).About 2 minute.
4. Add broth and stir again. Cover and let cook a few minutes. Stir then cook a few more minutes.
