This is not real catupiri that can only be found in Brazil, but it bears a strong resemblance to the real thing so multiple websites inform me. - Over very low heat, or a double boiler, melt the two cheeses together until they are completely blended.
- Remove the mixture from the heat, place it in a container and let it cool.
- Put the cooled mixture in the refrigerator for a few hours.
- Now you can use in any recipe that calls for Catupiry.
