A delicious way to cook catfish and made a wonderful family meal. I like recipes that aren't very complicated. This one fits that bill. The baked coating was crisp and had an excellent flavor. Appreciate this quick and easy recipe.
This is an excellent way to cook catfish. WOW, my family and I realllllly thought this was delicious and I was impressed by how easy it was to make. The fish were tender and flaky while the coating was crisp and well seasoned. Thanks for another great recipe. Keep 'em coming.

My son had some frozen swai he asked me to cook. I never heard of swai and was cooking for 2 people who don't like fish, one guest who did like fish and while I like fish, I rarely cook it because no one else likes it. I looked up swai and it is supposedly farmed asian catfish. I defrosted the fish and made this pretty much exactly - I didn't have any measuring devices and I used a lot of paprika since several reviews said it was too bland. I also put in a few good shakes of this sun-dried tomato and rosemary seasoning he had. My son gave 1/2 to his girlfriend, who liked it and my other son said it was actually alright. I thought it was pretty good. Served with Alton Brown's mac & cheese so everybody was happy.
I love this recipe...I am on a low carb diet so I dont add the flour...still fantastic!

i was pleasantly surprised -- i had some catfish in my freezer i needed to use and my DW is not a huge fish eater -- however, two pieces down (accompanied by fries and collard greens) she was telling me i could make this again -- as with the others, quick and easy and oh so good. :)
