  • Slice loaf in half horizontally.
  • Set halves, cut side upon a 15 x 12-inch baking sheet.
  • Broil about 4 inches from heat until toasted, about 2 minutes.
  • If crust side is soft, turn over and toast 1 to 2 minutes longer.
  • Cut garlic clove in half.
  • Rub cloves over cut surface of bread.
  • Brush or drizzle bread with oil.
  • Cut tomato in half horizontally; rub cut sides over toast, squeezing slightly to release juices.
  • Cut bread into 1 1/2-inch wide wedges and enjoy.

  3. I really liked this one. I used whole wheat bread and it tasted so good with the garlic! I decorated with basil. This is great to please a crowd and can be made to use for finger food with other types of breads, veggies and sauces. Made for Ramadan Tag game 2009.
     
  4. What an excellent recipe! I really enjoyed the blend of flavours- so much healthier than garlic bread but just as tasty! I also brushed on the olive oil to spare the calories. Thanks for a definite keeper of a recipe!
     
  5. This is fabulous! I was out of regular olive oil but I had a bottle of garlic basil dipping oil and used that. The bread is absolutely delicious and I will make this many more times. A nice way to use one of my millions of garden tomatoes.

Tweaks

  1. Bread and tomatoes are a wonderful combination. Combine it with garlic, and it's sublime! I almost burnt mine, and the fire alarm went off, but I scraped off the burned part and was it really terrific. Instead of a baguette, I used two Portugese rolls. I also used a brush to add a little oil (less than the recipe suggested). BF wanted more but I had to tell him there wasn't any more:( Will make this again, thanks Kathy!
