So simple and so good. This is a dessert that takes just minutes to make and its very healthy. Cooking time is for toasting walnuts.
- Toast the walnuts and cool. You can leave the walnuts whole or chop coarsely when cool.
- Mix the goat cheese and ricotta cheese together well with a whisk.
- Put the cheese mixture into small ramekins and refrigerate at least 15 minutes, or you can just mound on a dessert plate.
- Unmold the cheese. Top with 2 tbsp walnuts and drizzle each with 2 tbsp honey.
Made this for ZWT 8 the Spainish leg for Diners, Winers n Chives. I enjoyed how fast and easy it is to make and liked the presentation. My only issue is I felt the goat cheese was a little to strong in it for me and think next time I might cut that amount in half and increase the ricotta which I much prefer, maybe even add a little honey to the mixture. But then I'm not a big goat cheese fan, for me a little goes a long way. I think it's a nice, light dessert that most folks will enjoy.
