      Tip: Instead of mixing the cheese with the other ingredients, spread it on top.

      Delicious casserole. The only change I intended to make was to double the garlic and mince it. However, when I came back to review the recipe, I realized I only used half as many black-eyed peas as I was supposed to. It was very good as it was, but I love black-eyed peas so next time I'll use the full amount. :) Thanks for posting the recipe!

      I made this for the first time tonight and my husband and I both loved it! I'd put off making this because, in spite of loving black eyed peas, I was afraid it might be dull, but I was very much surprised and now it is one of my favorite dinner recipes. I used black eyed peas with bacon rather than with jalapenos, because I don't like jalapenos (my husband likes them but doesn't need to know they're in the recipe...) I also added several dashes of hot pepper sauce. I served the casserole with corn bread.

      We loved this casserole! Very easy,quick and delicious. I can't find black eyed peas with jalapenos, so I just put chopped up jalapenos on top. Served with cornbread and we thoroughly enjoyed it. Thank you!

      Hi PanNan, wonderful recipe, I had to change one thing, I couldn't find the ranch black-eyed peas either so I finely diced 2 small jalapenos and sauteed them for about 6 minutes then added them to the dish. Other then that the recipe was made as stated. This was wonderful at our get together, thanks so much for suggesting it. I have added it to my cookbook recipes to make over and over, and I will.

      I love black-eyed peas but have only known one way to serve them. Now I have two! This was a light dish...not overbearing like some casseroles can be. I have yet to find ranch style BEPs in this town so had to settle for plain. So I used a can of diced tomatoes with green chilis to spice it up a bit. Next time I'll add more chilis. This would also definitely be good as a side dish without the beef.
