Cashew Chicken (Microwave)

"This recipe was given to me by my friend and co-worker Lila. It is a quick and very tasty weeknight dinner. This can be doubled - just adjust cooking time."

  • Microwave oil on high for 3 minutes in a 2 or 3 qt microwavable dish.
  • Mix raw chicken chunks, soy sauce, cornstarch, ginger, garlic and sherry in separate bowl to marinate flavors.
  • After oil is hot, add the chicken to the oil.
  • Cover with saran wrap and microwave on high for 3 1/2 minutes.
  • Add peapods and cashews.
  • Microwave for 2-3 more minutes.
  • Serve over rice.

  1. I cut and marinated the chicken a day prior and made this in a non stick pan on the stove top. I replaced the snow peas with broccoli and sliced carrots and also added about 1/4 to a 1/3 C of water to make a bit of a sauce for the rice I served it with. We enjoyed this recipe and I will probably use the microwave in the dog days of summer when I really do not feel like cooking. Thanks for posting this simple, but tasty recipe.

<P>I'm a Mom of three boys: 19, 16, 13 (Josh, Jake and Jonah) and a 1 yr old golden retriever-Jethro. I work full-time as a Medicare compliance analyst for a non-profit health insurer. I love to cook - although I don't always have enough time to do as I'd like to do. I don't especially care to do the clean up though- but who does?? Food in general brings people together and makes people feel at ease. My boys love to help out in the kitchen-especially if I'm baking bread or baking sweet treats for them. If anyone were to ask them what I put in a recipe - first two ingredients they'd list would be olive oil and garlic -- (well not for the sweet stuff..at least)! I'm constantly browsing to see how I can alter/influence my family's eating - as well as trying to get it on the table quickly! My boys are all hockey players - so I spend a lot of time at the ice arena. When I have time of my own..I try to get on the golf course or read cookbooks.</P>
