These are very yummy!! I sliced the carrots diagonally into smaller pieces & was able to cut the cook time in half as well as omit the need for water. I will definately make this again.

The carrots were lightly glazed with a hint of garlic. Basic ingredients which produce an excellent recipe. I used a cast iron saucepan with lid and kept the temperature at medium low. After adding the water, the carrots were cooked to our liking in 15 minutes.

I liked these, DH was so so... There's a good mix of sweet and garlic here, so if you are a garlic lover then this one is for you. I love garlic but did find that I almost burned my pot dry both in the first stage with the olive oil and in the second with the water since there was very little liquid for the volume of carrots. So: watch it carefully and don't have the heat on too high (I did think mine was low enough, at first) I'm trying to eat carrots more often and to widen my range of carrot recipes. Please see my rating system: a good recipe if you like garlic to give your carrots a little kick out of the mundane. Thanks!
