This is a recipe I found years ago. I figure if carrots are good with amaretto, this one might work as well.
- 1 (16 ounce) package baby carrots, whole
- 1⁄2 cup Curacao
- 1⁄4 cup butter or 1⁄4 cup margarine
- salt and pepper
- Cook carrots in some water till almost tender. Drain.
- Add the curacao and butter; heat slowly, stirring occasionally until carrots are tender and have absorbed the flavors.
- Salt and pepper to taste.
