This is incredible. I got it from a friend, and it's become one of my favorites. You could almost use it for dessert. A guaranteed way to get kids to eat carrots.
Directions:

Drain and mash carrots until fluffy.

Add other ingredients.

Mix well.

Pour into greased casserole dish.

Bake at 350 for 45 minutes.

Recipes don't get much easier or tastier than this. I really liked this a lot and so did my family. My BF (a very picky and highly critical food critic) thought it was very delicious. He thought it was a sweet potato casserole because of the orange color. When I told him it was made with carrots he didn't believe me. LOL. I'm going to serve this again for Thanksgiving... I think it would be a great change from traditional sweet potato casserole. Very nice recipe, Bliss.
