Carrot Souffle

"This is my husband's family's answer to sweet potatoes since they don't like the traditional Thanksgiving dish. I found that I love this yummy way to cook carrots too. My family now enjoys this for holidays as well."

  • Cook the carrots until tender.
  • Mix all ingredients in a food processor.
  • Pour into a greased pan.
  • Bake at 350°F for 45 minutes.

I grew up in a very small town. We cooked all the time because there was only one restaurant - Dairy Queen. After I got married, I moved to Houston. I was a teacher and worked late every night, so we ate out all the time - which I thought was a real treat! I went back to school to get my Master's degree in Library Science - and again we ate out all the time. When I finished my degree I had my son. I cooked a little more but still not that much. Last March I had a beautiful set of twin girls. My husband and I decided that it would be best for me to stay home and raise our children. This meant that I would start cooking. I have found that I love cooking.
