Wonder for any occasion. Can be made for Passover if you use Matzoh Meal instead of flour
- 280 ounces canned carrots
- 70 ounces margarine
- 10 cups sugar
- 52 eggs
- 17 1⁄2 teaspoons baking powder
- 52 1⁄2 tablespoons flour
- 17 1⁄2 teaspoons vanilla
- Drain Carrots.
- Melt Margarine.
- Add Carrots to margarine. Puree all ingredients in processor or blender (in batches).
- Pour into Greased pans and bake 45 Min at 350 degrees.
This is a gem! I converted it down to 8 servings. I also used a Pampered Chef Cinnammon Sprinkle on top - it was amazing! It reminded my boyfriend of a cross between sweet potatoes and pumpkin pie! This is awesome!
