These are a great source of fiber, and low in fat and salt! From the Almond Board!
- 4 cups finely grated carrots
- 1⁄2 cup fresh lemon juice
- 1⁄2 cup chopped parsley
- 1⁄4 cup currants
- 1⁄4 cup blanched slivered almond, toasted
- 2 teaspoons ground cumin
- 12 butter lettuce leaves
- Combine all ingredients except lettuce in small bowl. Wash and gently dry lettuce leaves; remove hard core ends. Spoon 1/3 to 1/2 cup carrot mixture across center of each lettuce leaf. Tuck in ends and roll tightly.
Wonderful medley of flavors, love the texture, and it very attractive. Easy and healthy. The only thing I did differently was decrease the cumin by half so that DH would not notice it! And he didn't-yeah! Thanks Sharon123 for sharing. Made for 1-2-3 Hit Wonders game.
I really liked these! It's like eating a carrot raisin salad with a bit of lettuce added. I liked the crunch of the almonds and the sweetness of the raisins against the crips lettuce and sweet carrot. Thanks Sharon!
