  1. Grate carrots finely.
  2. Combine with chopped peanuts and the rest of the ingredients.
  3. Chill.
  4. Serve on crisp lettuce leaves.

I love the combination. I made this today with peanuts and raisins. Will make this often as I always have carrots in my fridge.

This was very good. Used (soaked) raisins instead of peanuts (didn't have any nuts at the moment). Next time I make it I'll add a little bit of lemon juice to sort of "freshen it up".

I wanted to use up some carrots and this sounded interesting, but in the end result I don't think it worked. Maybe mayo with carrots will be a better combination for someone else.
