  1. Preheat oven to 350°F.
  2. Steam carrots for about 10 minutes or until soft. Drain and mash well. Add breadcrumbs, cheese and seasonings.
  3. Beat egg whites until stiff; fold into carrot mixrture.
  4. Shape mixture into 24 rolls that are each about 2-inches long. Roll in crushed cornflakes. Place on a nonstick or lightly greased baking sheet. bake in preheated oven for about 20 minutes, or until browned.
  5. Makes 24 rolls ro 12 servings.
