This was a great and easy recipe! I only made 6 servings of it and it was great at dinner! I didn't have any coconut extract but I did have shredded coconut on hand and mixed that in instead! I will definitley make this again!

This was a quick salad to mix up when you need something fast. It also has a good flavor and not a lot of mayonnaise on it. The addition of coconut extract was a new twist for me. Thanks for sharing your recipe.

The coconut extract gives this recipe an interesting taste, but I would sprinkle it with a bit of coconut to let your guests know what there getting, just in case they don't like the taste of coconut. The raisins amount to one snack box full & the mayo 1/4 C.
