Carrot-Raisin Salad

This is great! I thinly sliced my carrots instead of shredded because I wanted more crunch. I used golden raisins and I put in 1 cup instead of 1/2. I also added 1 tsp. fresh chopped mint for color and I loved its taste with this salad! Thanks for the recipe!

  1. Scrub, scrape and shred carrots.
  2. Combine with raisins.
  3. Mix together remaining ingredients and pour over.
  4. Mix thoroughly.
