Flecked with pieces of carrot and laced with lots of spice, the bars have a texture that is nicely balanced between a cake and a chewy cookie. Use freshly grated nutmeg, if at all possible, in the frosting.

This made very good bars that will be a pleasure to eat - both for me and my family and the people that I work with. (One of whom has been nagging me for carrot cake.) Thank you sharing this recipe with us.
