Carrot Patties

"These are so good and moist. Make sure that you squeeze all the juice from the onion so that the patties don't fall apart. These are served with drained yogurt, which can be drained on a paper towel-lined colander for a few hours to overnight. The longer it sits, the drier the texture. Cooking time does not include the time for draining the yogurt. ingredients

  • 1 12 cups grated carrots, grate with the large holes of a cheese grater (about 3)
  • 34 cup finely chopped celery (2 stalks)
  • 12 cup grated onions or 1/2 cup minced onion, squeeze-dried on paper towels
  • 14 cup breadcrumbs
  • 2 large eggs, beaten
  • 12 cup fresh parsley, finely chopped
  • 1 teaspoon coarse salt
  • 14 teaspoon pepper
  • 12 cup drained yogurt
  • nonstick cooking spray

  • Combine carrots, celery, onion, bread crumbs, eggs, parsley and salt and pepper in a medium bowl. Press about 1 1/2 tablespoons of the mixture between hands to form the patties.
  • Form about 16 patties and place on a tray.
  • Heat a large nonstick skillet over medium-low heat. Coat with cooking spray.
  • Cook patties in 2 or 3 batches, until golden brown, 3-4 minutes per side. Serve hot with drained yogurt.

  2. Yum, these were so tasty. I made them for myself while my family laughed at me. Veggie patties? Ha! The pattie was sweet with carrot and savory while the yogurt was tangy and cool. This was great.
     
  3. I had high hopes for this one! I don't know what I did wrong but mine completely fell apart and it took a really long time for mine to brown on both sides. I halved the recipe exactly and even drained the onions. I ended up with about 9 patties. I even tried cooking on fry pan until brown on one side and then sticking in the oven for about 10 minutes at 450. They were a little bit better, but still fell apart. The taste was good. I used cilantro instead of parsley and 1 minced clove of garlic. I may attempt some other time. I also used my food processor to grate the carrot - maybe the chunks were too big?
     
  4. Made this today for lunch for 1. I split the recipe in half (kind of). I used green onions so I didn't need to squeeze dry them. Then I used 2 eggs instead of 1. I didn't have any parsley so I skipped it. Finally, I accidentally mixed in the yogurt with the rest of the mixture! That's what I get for not reading closely. Regardless, these were yummy. I ate them plain, topped with a little extra fresh ground pepper.
     
  5. Very nice. Went together so easy and fast! I used organic carrots and it made this a little sweeter so I added a bit more salt and onion. Thank you for a great way to eat veggies! I bet kids would love this
