- Preheat oven to 350.
- Melt the butter, and blend with sugar in a medium mixing bowl.
- Beat in the egg.
- Combine the dry ingredients, and mix into the butter mixture.
- Stir in grated carrots, vanilla and rasins.
- Spoon into a buttered 8x8 pan.
- Sprinkle with nuts.
- Bake for 25-20 minutes.
- After cooled, cut into squares.
