ingredients
- 3⁄4 cup shortening
- 3⁄4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 1 cup carrot, cooked and mashed
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt

Frosting
- 2 cups powdered sugar
- 2 tablespoons butter
- rind of one orange
- juice of one orange
directions
- Cream shortening and sugar until fluffly.
- Add egg, vanilla and lemon extracts and combine.
- Add carrots and mix.
- Combine flour, baking powder and salt. Mix into carrot mixture.
- Drop by spoonfuls on baking sheet. Flatten.
- Bake at 375 for 10-12 minutes.

Frosting:
- Combine powdered sugar, butter and orange rind.
- Add orange juice til spreading consistency. Spread on cooled but still warm cookies.
