This dressing was inspired by a salad at a local sushi bar, when i asked the chef what he used to make it he replied, "use carrots...and your imagination" and with a wink he walked away. Some days later i bought a bag of carrots and through trial and error came up with this recipe...Mr Sake would be proud :)
- 2 tablespoons light miso
- 3 teaspoons rice vinegar
- 1 carrot (grated)
- 3 tablespoons canola oil
- 1 tablespoon gingerroot (grated)
- 1 teaspoon water
- Put all ingredients in a blender and pulse until the dressing coats a back of a spoon.
- Enjoy over any salad with lots of cabbage!

What a great dressing! Extra easy to make and wonderful over braised cabbage. Will gladly make this again to enjoy. Thnx for posting, VER(Sachi). Made for Spring 2009 PAC.
