  • cook carrots, onion, garlic and seasonings in butter until they start to soften.
  • Add flour and stir to coat.
  • Add milk and one cup stock.
  • Cover and bring to a gentle boil, lower heat and simmer covered, for 30 minutes stirring occasionally.
  • Puree.
  • Add remaining stock and cream.
  • Heat throughout but do not boil.
  • Salt to taste.
  • Garnish with dill.

  1. It had a very good consistency, and did not have a bad taste, was just too bland. I had to add a substantial amount of cream sherry to give it taste.
