Carrot and coriander soup with a lentilly twist. Prepared in a pressure cooker but if you don't have one, I'd say it'd work in a normal saucepan if you cooked it for longer.

  1. Heat oil in pressure cooker. Add onion and soften.
  2. Add garlic, ginger and ground corainder. Cook for a minute.
  3. Add all other ingredients.
  4. Bring to boil and lock lid in place.
  5. Cook for 6 minutes.
  6. Release pressure.
  7. Blend until quite smooth.
  8. Check seasoning and garnish with fresh coriander.
