I really like the onion and peppers in this. DS wanted more breadcrumbs on it. Oh yes, I added the jalapenos which gave it just a little kick. Love this recipe! Made for *1 2 3 Hit Wonders* game 2007
VERY Delishious side dish!! This casserole was so yummy! The jalapenos did not over power the dish at all. It was not hot at all, just a perfect mix of flavor!!! Served with a BBQ sauce meatloaf and mashed potatoes.
What a great way to dress up what many think of as a lowly vegetable! I love carrots raw or cooked, & your recipe takes 'em to a whole new level! I made this up earlier in the day and popped into the oven (165C fan forced) for about 25 minutes. I also steamed my carrots for 8 minutes and used 1 slice of wholemeal/wholegrain bread (processed in the food processor) which gave me just under 4 tablespoons of crumbs and I used a mix of red and yellow peppers and the 3 of us enjoyed our generous side serve of carrots, thank you MarraMamba, made for Everyday A Holiday.
This carrot casserole is fantastic! Love the combination of flavors and spices, and the thick and creamy sauce is just delicious. I used fat-free evaporated milk and light margarine with great results. I used a couple of generous sprinkles of crushed red pepper flakes instead of the optional chopped jalapeno and that gave it a nice little kick. This is a keeper - thanks for sharing the recipe!
