I chose this recipe because it had less oil in than most. I actually used half applesauce and it still turned out with a great dense carrot cake texture. I baked the cakes in 2 9" pans and sprinkled 1/4 cup of chopped pecans on each layer. I used my own cream cheese frosting recipe, but the cake was absolutely delicious. Loved it!

This is the best carrot cake recipe I have ever tried. I don't eat dairy but I do bake for my family a lot. This was a very straight forward recipe, I followed the recipe exactly as it's posted. I was told that the icing came out too sweet. I used the entire 10 oz of powdered sugar since I didn't have anyone around to pre-taste the icing and I didn't want to make it "not sweet enough". Thank you for posting!

This carrot cake is really at it's best. We could live off of this. Last time I made it I forgot to put the oil in I also had no cream cheese for the frosting so I omitted it, my family still had no problem gobbiling it down!

I really enjoy carrot cake,but since I'm the only one around here that eats it it would go bad before I could eat a whole cake.So, I decided to make half a recipe and bake it in an 8 x 8 inch square pan.And I kept the baking time the same,and it worked just fine.Thank you for posting,this will be made again."Keep Smiling:)"

Fantastic recipe. They're moist even if they only have 3/4 c oil (unlike other recipes that calls for more than 1c). I use 270g ungrated carrots, Then i squeeze out most of the moisture fr the carrots once grated. Reduce the sugar to 1.5c instead of using 2c. And they're just perfect and not too sweet. BAked in 8x12 pan for 43min

I just had to try this carrot cake and the picture was the hook. Not only are you a great cook but photography appears to be another talent. Are those decorative carrots? I'd like to add those and where can I find them? Wonderful recipe and thanks for sharing. Lolly

This is a yummilicious cake. It is also our family favourite since the last 4 years. The only thing we don't use is the cream cheese. I love the photograph posted. Good one!
