Carrot Cake

"This carrot cake is one of my absolute favorite recipes made by my mother Ruth. This cake has been her most requested cake to be made. This is definitely a family favorite recipe."

ingredients

• 2 cups sugar
• 1 1⁄2 cups Wesson Oil
• 2 cups carrots (grated)
• 2 cups cake flour
• 2 teaspoons baking soda
• 2 teaspoons baking powder
• 2 teaspoons cinnamon
• 4 large eggs
• 1 1⁄2 cups pecans, chopped

• Frosting

• 1 (8 ounce) package cream cheese
• 1⁄4 cup butter
• 1 lb confectioners' sugar
• 2 tablespoons vanilla

directions

1. Mix wesson oil and sugar. Add carrots. Mix and then add flour and spices. Add eggs one at a time. Bake for 25 minutes in a 300 degree oven.
2. Cool. Ice with cream cheese frosting.
