Bugs Bunny would be glad! This is a very moist, yummy cake. It should be kept in the refrigerator. Serves 6-8

  1. Preheat oven to 350°F.
  2. Grease & flour three 9-inch cake pans.
  3. Beat sugar & eggs till thickened.
  4. Stir in oil.
  5. Sift flour, soda, baking powder, cinnamon, & salt.
  6. Stir into egg mixture.
  7. Fold in carrots.
  8. Spoon batter into pans.
  9. Bake for 35-40 minutes until cake tests done.
  10. Turn onto wire racks & cool.
  11. Mix together all frosting Ingredients.
  12. Beat until smooth & frost cake.
