A carrot bread packed full of delicious spices!
- 3⁄4 cup grated carrot
- 1⁄4 cup peeled and cored grated apple
- 1 cup raisins
- 4 teaspoons shortening
- 1 cup sugar
- 1⁄2 cup brown sugar
- 1⁄4 teaspoon nutmeg
- 1⁄2 teaspoon ground cloves
- 1 teaspoon cinnamon
- 1 cup water
- 1⁄2 cup orange juice
- 2 cups flour
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- Combine first 11 ingredients in saucepan.
- Bring to a boil, then let simmer 5 minutes.
- Sift in dry ingredients; mix thoroughly.
- Bake in greased loaf pan at 350 degrees for 50-60 minutes.
This bread is REALLY TASTY and it was nice that its EGGLESS as well so I could make it the other day for the Navratri festival start. I used a whole red apple, 1/2 cup raisins, and I substituted the shortening with margarine and the nutmeg with additional cinnamon. The only problem that I faced was that this bread did not bake completely well even after 2 full hours of being in my AMC Dutch Oven. Generally, all the breads such as this bake in 1 hour, some even in 45 minutes. This took too long and yet wasnt ready. The bread is tasty, the spices in perfect measurement, everything is nice about it, the sugar content is balanced with the spices; its all nice, but if we could just find a way of how to bake it sooner(maybe at a higher temperature?), I could add it to my collection for trying it again in future. Update: I have found out where I was missing something. The carrot mixture has to be allowed to cool completely before adding the dry ingredients to it. I had refrigerated some of this bread for the last 5 days and today, it's really good - yummy as ever and not so moist - wonderful to dig into;-)!
Very delicious bread.. I increased the nutmeg and left off the cloves and added 1 c. chopped walnuts. Yum! Thanks Kree.
