  1. In a small saucepan cook carrots, covered, in the 3/4 cup boiling water for 20 min.
  2. Cool.
  3. Put this and the apple juice in the blender.
  4. Cover and blend until the carrots are smooth.
  5. Add additional apple juice if needed for desired consistency.
  6. Chill and serve.

I'm always looking for ways to sneak veggies into my fusspot toddler. I made this for her but watered it down slightly so it wasn't too rich for her. She downed it no problem so thankyou for a way to get carrots into her!
