Very quick healthy salad. Came from a booklet of recipes to help kids eat healthy.
- 2 cups shredded carrots
- 2 cups chopped apples
- 1⁄2 cup Miracle Whip
- 1⁄2 cup raisins
- 1⁄2 chopped pecans
- 1 tablespoon lemon juice
- Combine all ingredients and toss lightly.
- You may use less or more lemon to taste or lite Miracle Whip.
I cut the recipe back to one serving and used 3/4 tbsp of lite Hellman's dressing. Very tasty and healthy
A nice change from my usual Carrot Salad. Excellend combination of flavors & textures. Loved the addition of pecans - they made the salad in my opinion.
Delicious. Definitely going to be a repeat at our house. I did sub 1/2 mayo and 1/2 Greek yogurt for the Miracle Whip.
