  • 12 lb carrot
  • 14 pint pure orange juice
  • 2 ounces raisins
  • 2 ounces desiccated coconut


  1. Grate carrots Cook raisins in orange juice to swell, then cool.
  2. Mix raisins and carrots.
  3. Add coconut and chill in nice serving bowl.

I thought this salad was good. It was quick and easy to make, but no one else in my family liked it. So it probably won't be something I'll try again, but thanks for posting anyways!

Very good. I love coconut so I put more in. Bet strawberry slices would be nice too!
