A very easy but tasty soup recipe
- 4 medium carrots, peeled and finely minced
- 2 tablespoons chopped fresh dill
- 5 tablespoons butter
- 1 cup chicken stock
- 1⁄2 cup heavy cream
- in a med saucepan, saute the minced carrot and dill in the butter for 30 mins over low heat.
- add chicken stock and simmer for 15 minutes.
- Add cream and heat through, seasoning with salt and pepper to taste.
- garnish with a dill sprig and serve.
