I was looking for quick side dishes with veggies that we can make and came across this one. I think the varieties are endless, different herbs and different veggies.

  1. Bring to boil the chicken broth and carrots in a small saucepan.
  2. Stir in the couscous and cover, remove from heat. Let stand 5 minutes.
  3. Fluff couscous with a fork, stir in cilantro and oil. Add salt and pepper if needed.
