Directions

  1. Pre heat oven to 375. Spray twelve cup muffin pan with oil spray. (I use 24 cup mini muffin pan ).
  2. Combine brn flakes with wholewheat and al-purpose flours, cinnamon, soda, baking powder, sugar and salt.
  3. In seperate bowl , blend egg whites, oil, buttermilk, apple sauce and lemon juice.
  4. Combine with dry ingrediants. Stir in carrots and raisins until combined.
  5. Spoon into muffin cups.
  6. Bake 20 minutes until risen and golden.
