    Ingredients:

    Yield:

    muffins

    Units: US | Metric

    Directions:

    1. 1
      Pre heat oven to 375. Spray twelve cup muffin pan with oil spray. (I use 24 cup mini muffin pan ).
    2. 2
      Combine brn flakes with wholewheat and al-purpose flours, cinnamon, soda, baking powder, sugar and salt.
    3. 3
      In seperate bowl , blend egg whites, oil, buttermilk, apple sauce and lemon juice.

      Combine with dry ingrediants. Stir in carrots and raisins until combined.
    5. 5
      Spoon into muffin cups.
    6. 6
      Bake 20 minutes until risen and golden.
