Carrie's Broccoli Salad

This is my favorite broccoli salad recipe. I came up with this one, from a combination of several recipes, and it has adapted into my own. Always a hit, and always someone wanting the recipe.

Ingredients:

Serves: 8

Yield: 6.0 cups

• 2 -3 heads broccoli, chopped
• 1/4-1/3 cup sweet onions or 1/4-1/3 cup red onion, chopped finely
• 1/3 cup sunflower seed, roasted
• 1/2 cup raisins
• 3/4 cup sharp cheddar cheese
• 1/2-3/4 cup bacon, chopped finely

Dressing

• 1 cup mayonnaise
• 2 tablespoons sugar
• 2 teaspoons red wine vinegar

Directions:

1. Mix dressing ingredients together, set aside.
2. In a large bown combine first 6 ingredients.
3. Toss with dressing.
4. Enjoy!

6. ~I chose to use mostly the florettes in my salad, I find most of the stalk is very woody.
7. ~I also use bacon that is already cooked and chopped, you can usually find it in the salad dressing sections of your store.
8. ~I have also used Splenda with wonderful results.

I love broccoli salad and this was really good! I didn't have raisins, so used craisins and used veggie bacon. I liked the dressing. Overall, a great salad! Thanks!
